What could be tastier than hot, crispy, crunchy zucchini fries dipped in cool, herby green goddess dip? My expression in this video says it all, ha! Hope you try it out for your next party, or even a weeknight dinner side!

Zucchini Fries
3 zucchinis, sliced into thin spears
1 cup of cake flour or cornstarch
2 eggs, beaten, with a splash of water
1-2 cups of panko
1/4 cup of parmesan
1 tbsp fresh chopped dill
tsp of salt, plus more for seasoning
oil for frying (vegetable oil or canola oil or peanut oil)
Directions:
Place the flour, eggs and panic in separate bowls. Add the parmesan, salt and herbs to the panko and toss to combine. Dredge the zucchini in flour, tap to remove excess, then dip in egg, followed by the panic. Gently lay the zucchini fry into the oil and fry for several minutes or until golden brown. Remove and place on paper towels and immediately sprinkle with a little more salt. Continue with the rest of the zucchini spears. Serve with green goddess dip or one of these dips

Greek Green Goddess Dip
1 cup low fat plain Greek Yogurt
1 cup low fat mayonnaise
1 garlic clove, minced
1/2 cup fresh mint
1/2 cup fresh parsley
1/2 cup fresh basil
1/2 cup fresh scallions
1/2 cup feta (I use sheep’s milk feta because it’s milder and very creamy
Directions:
Place all the ingredients in a food processor and blend until smooth.
