Crispy air fryer salmon bites are perfect for building your next Asian inspired protein bowl. Steamed broccoli and rice, crunchy cucumbers and our favorite Japanese seasoning, Furikake, brings the whole bowl together for this delicious and easy weeknight dinner.

For the Salmon:
- 2 lbs fresh salmon, skin removed
- 4 tsp cornstarch
- 4 tbsp low sodium soy sauce
- 4 tsp toasted sesame oil
- 2 tsp olive oil
- 1 tsp kosher salt
- 1/4 cup honey
- 3 garlic cloves, minced or for best taste, rate over microplane
- 1 tsp grated ginger
For the Bowl:
- 2 cups cooked jasmine rice
- 2 cups steamed broccoli florets
- 2 cups sliced Persian cucumbers
- 1/4 cup sliced scallions
- 1/4 cup Furikake seasoning (Japanese nori and sesame seed topping)
Instructions
- In a large mixing bowl, whisk the cornstarch, soy sauce, sesame oil, olive oil, salt, honey, garlic and ginger together. Cube the salmon into one inch pieces and gently toss in the marinade to coat
- Place the salmon in the air fryer, placing the pieces evenly across the baking sheet but not so close that the pieces touch
- Air fry for 8 minutes
- To assemble the bowls:
- scoop 1/2 cup cooked rice in the center of each bowl
- in one corner pile the steamed broccoli, then the sliced cucumbers and finally the salmon
- Top with sliced scallions and sprinkle with Furikake seasoning
