This viral Jennifer Aniston salad is supposedly what the star ate every day on the set of ‘Friends’. While I’m not sure about that, I can attest to the absolute deliciousness of this salad and how she could have eaten it nearly every day. Packed with plant based protein including chickpeas and quinoa and full of crunchy and healthy greens, it’s the perfect mid day pick me up or clean dinner option and I always feel so good after I eat it. I always have leftovers which i love to reinvent into this bright and herby quinoa and vegetable soup

For the salad:
- 1 cup cooked and cooled quinoa
- 1 cup canned chickpeas, drained and rinsed
- 1 cup diced Persian cucumber
- 1 celery stalk, diced
- 1/4 cup parsley leaves
- 1 heaping cup chopped mixed field greens
- 2 heaping cups chopped romaine lettuce
- 1/4 cup crumbled sheep’s milk feta
For the dressing:
- Zest and juice from one lemon
- 1 garlic clove, minced
- pinch of kosher salt
- 1/4 cup extra virgin olive oil
- 1/4 cu chopped scallions or chives
- 1 tbsp fresh chopped basil
- 1 tbsp fresh chopped dill
Instructions
- In a large mixing bowl, combine the lemon zest and juice, salt, minced garlic clove, scallions, dill and basil and stir to combine.
- Drizzle in the olive oil and whisk to combine. Taste or seasoning and add salt if needed
- Add the quinoa, chickpeas, cucumber, celery parsley and mixed greens and romaine. Toss gently with the vinaigrette.
- Serve the salad and top with crumbled feta.
