Some weeks I can barely keep the fridge stocked well enough to make a healthy lunch for my son. Then I realize string cheese and sliced turkey meat is practically all I’ve got and I need to get dinner on the table too! I’ve created a few simple dinners using items I’d normally stuff in his lunchbox. Good Morning Texas liked the idea so much, they asked me to do two segments on it. Here is Part 1, the easiest quiche you’ll ever make. I love to serve it with a side salad for my husband and I and some steamed broccoli and rolls for the boys. The best part is you can bake it ahead and serve it room temp for dinner that night, or just reheat in the oven for the simplest, healthy and delicious dinner.
[ingredients]
5 large eggs
1.5 cups milk (whole works best for this recipe)
4 oz smoked turkey breast, chopped
4 oz mozzarella or other cheese (cheddar, gruyere, Swiss)
Small handful spinach, chopped
Salt and pepper to taste
1 frozen pie crust
To make: mix all the ingredients in a mixing bowl. Pour into pie crust, bake on 375 for 30-45 minutes or until egg mixture is set.
