2 slices of squishy whole wheat bread, crust removed
1 tbsp extra virgin, cold press olive oil (I use Pompeian)
1 carrot, julienne
1 cucumber, julienne
1 slice American cheese (Cheddar is delicious too!)
1 slice smoked turkey breast (Ham is yummy also!)
Instructions
Using a rolling pin, roll out the bread until it is thin, like sushi rice on a sushi roll (about 1/8 thick).
Brush generously with olive oil. This serves two purposes; it keeps your bread moist and it offers a healthy kick to this sandwich because it’s high in unsaturated fat!
Place the slice of cheese, then the slice of turkey, on the oiled bread.
Place a couple sprigs of julienne carrot and cucumber.
Roll up your ‘sushi sandwich’, then give it a little squeeze to firm up.
Slice in half, then in half again.
Place in a bento box or divided tupperware to maintain sushi shape.
