Asian Flank Steak Salad with Peanut Dressing

Ingredients

  • 1 pound grilled medium rare flank steak, sliced into thin strips
  • 5 oz bag Zen blend lettuce (mix of Asian greens, baby kale and spinach)
  • 16 oz container Shitake mushrooms, destemmed, washed, and sliced (can substitute baby bella mushrooms)
  • 16 oz snow peas
  • 1 red bell pepper, sliced
  • 1/2 cup Wonton strips (optional)
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp toasted sesame seeds
  • 1/2 Thai peanut sauce salad dressing of your choice

Instructions

  1. Place the greens in the bottom of a bowl. Sprinkle mushrooms, snow peas, bell pepper, and half the wonton strips on top.
  2. In a separate bowl, toss the flank steak, sesame seeds, and 3 tbsp of the peanut sauce together.
  3. Add the steak to the salad, then add the remaining dressing and toss.
  4. Sprinkle remaining wonton strips, cilantro, and mint, and serve immediately.
