Weeknight Dinner: Healthy Turkey Meatball Dinner

Lighten up this classic American comfort food and have it on the table in under 45 minutes. My healthy turkey meatballs will warm your family’s bellies and get your week started off right! The best part is this recipe makes enough for leftovers tomorrow, and taste even better reheated. Enjoy!

Healthy Spaghetti and Turkey Meatballs
1 lb ground turkey meat
½ onion, chopped and sautéed in butter
1 egg
¼ cup breadcrumbs
¼ cup water
salt and pepper
1 jar favorite marinara sauce
1 zucchini, spiralized
½ lb cooked spaghetti
Directions:
Place the marinara sauce in a medium sized pot. In a mixing bowl, combine the ground turkey, sautéed onion, egg, breadcrumbs, water, salt and pepper and mix to combine. Form medium sized meatballs and place in marinara sauce. Cover with lid and turn heat to medium. When it begins to simmer, turn down to a simmer and cook for 30 minutes. Sauté spiralized zucchini in butter for a couple minutes until tender. Add the spaghetti and sauté for another minute. Place the zucchini pasta in a dish and spoon out meatballs and sauce on top. Sprinkle with parmesan cheese, if desired.
