Reinventing the Classic Cheeseburger

I’m on vacation at the beach and that calls for chill nights grilling out burgers.  Maybe it’s the Jewish mother in me, but I always make too much food! I have every intention of eating the leftovers, but a day old burger on a day old bun just doesn’t sound that inviting! But it makes for the perfect stratta.  Stratta is an Italian dish somewhere between a quiche and a frittata.  It is layered like lasagna with an eggy bread mixture, your choice of vegetables or meat and a hearty melty cheese.  Here is my cheeseburger stratta, my photographer Nick devoured it the second we finished filming.  My kids and husband didn’t complain either 🙂  Try making this on a weeknight when you have some leftover grilled burgers and let me know how yours turns out!

Reinventing the Classic Cheeseburger

Ingredients

Scale
  • 1 cup diced onion
  • 2 garlic cloves, minced
  • 1 diced yellow, orange or red bell pepper
  • 1 tbsp dried thyme, crushed
  • good glut of ketchup
  • 8 whole eggs
  • 2 cups of milk (I use low fat)
  • 8 hamburger buns (mine are whole wheat)
  • 8 grilled hamburgers
  • 12 slices cheddar cheese
  • salt and pepper to taste

Instructions

  1. In a large saute pan with a pat of butter, saute onions, garlic, pepper and thyme for a few minutes until softened.  
  2. Season with salt and pepper.  
  3. Crumble hamburgers into the mixture and add ketchup.  
  4. Stir and cook for a few minutes.  
  5. Meanwhile, combine eggs and milk in a large mixing bowl and whisk well.
  6. Cube the buns and add it to the mixture, allow a few minutes for the bread to soak up the eggs and milk.
  7. In a large casserole dish place half of the egg and bread mixture and spread evenly.  
  8. Then, layer half of the meat mixture and spread evenly.  
  9. Then, place six slices of cheese on top.  
  10. Repeat, just like a lasagna with the final step being the slices of cheese on top.
  11. Bake at 375 for 20-30 minutes or until bubbling.
