I can’t imagine anything worse that going to a mall today. However, I still have gifts to give before the holidays are over. I made two versions of chocolate bark and enlisted the help of my two boys. It made the process a little more lengthy (and messy), but I can give these presents and tell people that the kids made it themselves! A homemade edible gift goes a long way for the teachers, care givers and special people in your life. Here are the recipes for both of my latest versions; Shiner Bock Bacon Almonds and Cranberries and White Chocolate Peppermint. They look elaborate, but no one needs to know how simple and easy they are to make! If your children are old enough to write, have them create a personalized tag for each special person in their life. Happy holidays!
PrintShiner Bock and Bacon Almond Chocolate Bark

Ingredients
- 2, 12-ounce packages good semi sweet chocolate
- 3 bars of your favorite bittersweet chocolate (I like Elite, 70% Cocoa)
- 3–5 tablespoons Pulverized Shiner Bock and Bacon Glazed Almonds (mine came courtesy of Kent Rathbun, a local chef in Dallas, but here is an easy recipe on how to make them yourself)
- 3 tablespoons chopped dried cranberries
- double boiler
- large cookie sheet
- parchment paper
Instructions
- Place all the chocolate in the top of a double boiler and place water in the bottom boiler.
- Turn on the heat and stir the chocolate until melted.
- Pour onto a parchment lined baking sheet and spread until a 1/4 inch thick and smooth.
- Sprinkle generously with pulverized almonds and then dried cranberries.
- Allow to cool and harden completely. Then cut into large chunks.

White Chocolate Peppermint Bark

Ingredients
- 2, 12-ounce packages good white chocolate
- 4 medium candy canes, pulverized in a food processor
- double boiler
- large baking sheet
- parchment paper
Instructions
- Melt chocolate in double boiler, stirring occasionally.
- Pour onto a parchment lined baking sheet.
- Sprinkle generously with crushed peppermints.
- Allow to cool and harden completely before cutting into large pieces.
- Enjoy!
