- 2 lbs peeled carrots, sliced on a diagonal, 1 inch thick
- 1/4 cup extra virgin olive oil
- 1/4 Grade A Maple Syrup
- 1 tsp fresh thyme, de-stemmed
- Kosher salt and fresh cracked pepper
Instructions
- Heat oven to 375. On a parchment-lined baking sheet, place the carrots and drizzle with maple syrup and olive oil.
- Sprinkle with salt, pepper and thyme. Toss and spread evenly on the tray.
- Bake for 20 minutes or golden brown at the edges.
